how are U all doing------- Oh i am doing great ! i have very special guests rite now with me------ oh they are my sister and brother-in-law, visiting from Rochester----- how exciting especially if someone praises you all the time ---- what ?well it is about my spicy cooking.You know we just had a very important HINDU INDIAN festival----- DIWALI--- and everyone loves to make new goodies .Well ,my friends i am going to share with U all, some of my Favorites pickle receipes ,let's start:-
GREEN CHILI PICKLE
INGREDIENTS
1.Green Chilies 200 gms
2.Fenugreek seeds ( methe) 50 gms
3.Fennel Seeds ( Saunf) 50 gms
4.Asfoetida ( Heeng) 1/4 tea spoon
5.Mango powder ( Amchoor) 3 table spoon
6.Musterd Seed Powder ( Raaee) 2 table spoon
7.Salt 50 gms or abt.4 table spoons
8.Cooking Oil 3 table spoons
9.lemon Juice 1/3 cup
10.Vinegar 1/3 cup
11Turmeric powder 1/2 tea spoon
METHOD
Wash ,towel dry & cut chilies in to bite size and keep aside
Grind together no.2,3,and 4 into a coarse mix.
Mix all the ingredients with Chilies.
Put all these in a clean and tampered jar. (tampering the jar :- method ---in a hot frying pan,put a little oil,add a pinch of asfoetida ,when the smoke rises, put the glass jar upside down so that the fumes are captured in the jar.)
Pickle will be ready to eat within 2-3 days------------- enjoy your pickle with -----Parantha,rice and ordinary "roti-sabji" or Humble bread or pita bread
So how is pickle ?if you find it not very spicy or it is not burning your mouth ---- ha ,ha, --- you
can add some red ground pepper and make it to your taste.
